Keep your cake cool

Townsville summers are hot and sticky, and buttercream knows it. My cakes are piped to hold up in North Queensland weather, but a few simple steps keep yours looking perfect from pick-up to the first slice.

Getting it home

Transport

  • Put the air-con on before the cake goes in the car.
  • Carry the box flat on the car floor, not on a seat or a lap.
  • Drive like you've got a cake on board: gentle corners, no sudden stops.
  • Go straight there. Never leave a cake in a parked car, even for a minute.

Until the party

Storage

  • Keep it in an air-conditioned room, out of the sun and away from windows.
  • Cream, custard, cream cheese and fresh-fruit cakes go in the fridge until it's time to serve.
  • Buttercream cakes can sit in the air-con on the day. On a hot day or a long party, use the fridge.
  • Take it out of the fridge about [30–60] minutes before serving so the sponge softens and the flavours come back.
  • Outdoor party? Keep the cake inside until candles, then bring it back in.

Food safety

The 2-hour rule for cream cakes

Cakes with fresh cream, custard, cream cheese or fresh fruit need to stay cold (5°C or colder) until serving.
  • Under 2 hours

    Out of the fridge: put it back in the fridge or serve it.

  • 2 to 4 hours

    Serve and eat it. Don’t put it back in the fridge.

  • Over 4 hours

    Throw it out. It’s not worth the risk.

Serving

How to cut it

  1. Use a long, sharp knife dipped in hot water and wiped dry between cuts.
  2. For party slices, cut 5 cm wide strips, then cut each strip into 5 cm pieces.
  3. For finger slices (smaller serves), make the strips 2.5 cm wide instead.
  4. Tiered cakes: lift each tier off first and remove the dowels or straws before cutting.

Before serving

Remove the non-edible bits

Cakes may contain dowels, straws, wires, picks, toppers and fresh or silk flowers. Remove these before serving. Fresh flowers are decorative only.

Only edible-labelled glitter and dusts are used on my cakes.
